I've done successfully something similar long ago - I created and zero'ed
a single large file and then logged to it.  But depending on file-system
and mount options you may still get file meta-data e.g. last-modify-time
being written to the file system.

If your needs are simple you could skip the filesystem, and write directly
to the flash drive.
