The program you use should have the option to flip the image. 

Programs like fswebcam (which I use - http://www.firestorm.cx/fswebcam )
and camsource ( http://camsource.sourceforge.net/ )

both have flip options, for example.

Gnomemeeting... Doesn't have the option, at least not in version 1.2.2. 
There's apparently been plans to do it, but it hasn't made the cut yet.

May wanna try poking around there to get it implemented. Ditto with the other 
prog you mentioned, which I'm unfamiliar with.
