For multichannel recorder there's the Waveshark, now in development phase.
It can record from 4 channels simultaneously up to 1 mhz sampling rate.
It's almost impossible to have a simultaneous stream from many USB
microphones, each of them has got a specific clock with slighly difference
in the oveall frequency so after some seconds or minutes the syncro could
be lost
