Jonathan,
For making spectrograms Audacity works fine and it is free. Cornell
University also has Raven-Lite that is free.
I know that Raven will allow you to export the spectrogram, not certain
about Audacity. If you have a screen capture application or better yet if
you are on a Mac, you can capture that portion of the screen that you want
once you have the spectrogram displayed.

I use Adobe Audition 3.0 for all my sound editing as well as spectrographs
and it's the only one I am familiar with. For reproducing the spectrograms I
photograph my screen using a digital camera. There are probably better ways
to do this but it quick and easy for me.
