Hi Mark--
Concerning principles of near to medium field stereo sound recording, 
I'd suggest
"On-Location Recording Techniques," by Bruce Bartlett with Jenny Bartlett

Its not very useful for locating suitable mic models for nature 
recording. This list's archive has a wealth of discussion about mic 
selection.  Try:
