Or you could purchase a Macintosh laptop.
The specs for the least expensive iBook are
about the same as the Mac Mini.  Currently,
the iBook with 12" display costs $400 USD
more than the Mac Mini, but includes the keyboard, 
LCD screen and battery power supply needed to 
run the box in the field.  

You'll need an external A/D converter that
has USB output, since the Macs have no analog
audio input.  The cheapest is the Griffin iMic,
$35 USD, but you'd probably be interested in
an A/D with better specs, such as the 
Sound Devices USB/Pre (about $550 USD).
