I'm relatively new to birding and new to COG so it's rare that I can help out - but I can here! My other half and I know the Uralla area well (Uralla is just south of Armidale and well worth a stop).
You could stop off at 'Dangar's Lagoon' which is close to Uralla - there is a bird hide there. Here's a link to some further info for you:

If you're heading up via Wellington then a nice return trip might be through Mudgee. It's quite different countryside and nice to get the variety.
