European Goldfinch question

Seeds of plants of the thistle family attract large numbers of Goldfinch in England and it looks to me as if thie bird is eating seed - note the seed "stalks" at its bill and that some of the flower heads have gone to seed.

I think this is a Hawkweed but I'm a very poor botanist.
