Hi Alistair,

I'll defer to the experts on this one, but I think you'll find its related
to feeding - the ability to grasp prey under sand or mud while probing with
your bill closed (so you don't swallow said sand or mud).  The flexion while
roosting would be the equivalent to a wing stretch.
