Surely part of the story is also that eggs buried in warm earth and vegetable materials have the heat provided from all sides at once, whereas, eggs in nests above or on the ground have heat mainly from above, ie parents' bodies and in some cases sunshine - the latter therefore requiring turning to evenly distribute heat throughout the egg, the former having this automatically.
