Hi Tom,
as others have suggested, Chiltern and surrounding area is a good
stopover for birds. In the surrounding area there are a lot of
wineries and good restaurants. Sounds like you are planning on doing
the trip over the Easter weekend (Friday - Monday) , which means you
really need to book accomodation. I wouldn't plan on rolling into
Sydney on April 1, half the city will be in their cars trying to get
back home on the Monday afternoon. It is also School holidays in
Victoria (Mar 29 - Apr 14). NSW holidays don't start till April
13. If you are travelling a little later you could look at taking
the King's highway from Canberra into Bateman's bay and stay on the
NSW south coast and travel to Sydney up the Prince's Hwy. Plenty of
options to stay there, the coast between Bateman's Bay and Ulladulla
is very scenic. Pretty Beach and Depot beach both have cabins where
you can stay on the edge of the National Park, though it's a bit of a
drive to find a restaurant. You can just about guarantee not
getting accommodation there till after Easter. Both places are good
spots to see Kangaroos though and there are some walking trails with
good birding as well as shorebirds on the beaches.
