The 17th century British doctor and scientist Christopher Merrett. He wrote
on a range of diverse subjects including tin mining, the flow of sap through
trees, glassmaking, sparkling wine production, fossils (and his "guess" that
they were of organic origin), and compiled lists of British fauna, including
birds.

A trivia question. Who drew up the first list of British birds and
also developed what is now call the Méthode Champenoise system of
making sparkling wines?
Cheers,
