Unfortunately in states like Victoria that allow hunting, certain quail are
allowed to be shot - presumably for consumption (although I do not know the
legalities regarding the sale of wild game). The wild species that are
allowed to be shot are Stubble Quail, and the introduced California Quail
and European Quail.

They are domesticated Japanese quail.  Their eggs are also sold - they
are even more reliable layers than domestic fowls.
