The coloured text in your email requires it to be in html format. Often, but
not always, the list uses the non-html version of the email that is included
with the html one. The result is often a mess compared to what you thought you
sent. Even if it doesn't do this, people with non-HTML mail readers will see
the text only version anyway.
It can be better to switch to text only mode for interquoted replies. In
Outlook you do that by clicking on Format then Plain Text. Can't remember how
you do it in Outlook Express that you're using, but it will be something
similar.
Plain text is the standard for email. HTML format is something Microsoft
decided to add, and this is the result.
