Ramblin John Gamblin asks: What makes a dove a dove and a pigeon a pigeon? The ultimate answer to this and any other (sexually reproducing) biological entity of which the question is posed, is: "its parents". Or specifically, the genetic material passed down from its parents. It's obvious, like the time I was on a COG stall with another man who asked a young school boy who stopped at our stall: What do Kookaburras live on? "Trees", he said. Quite right too.
