Wrong, Timothy, wrong. Like most American versions, yours uses a sweet
orange. It should be a Seville or Poor man's Orange, ie a bitter one.
 I have never cooked a wild duck and don't intend to try, ever; but the
best and absolutely classic way to cook a domestic duck is Braised with
Green Peas - and should only be attempted when green peas are available
fresh, to be shelled yourself. A recipe will be found in Jane Grigson's
Vegetable Book, recently re-issued by Penguin in a much more durable
binding than my well-worn copy.
Thought for vegetarians - man is an obligate omnivore.
