I've added a section to the wiki that briefly goes over the major toolkits and tools along with links to simple tutorials:

As this is a standard Debian system, there isn't any real consideration you need to make from our boards versus another Debian desktop.  Debian Squeeze ships with GTK 2.20, and we include the runtime libraries.  I do not believe we include the development headers by default, but you can install the package 'libgtk2.0-dev' to get those.
