How come you choose for a course final project a thing that you have no idea what it does?
Was it pushed to you? :-)
 
As an electronics student in a few hours/days you will know how to use it, just follow previous hints.
Also, get acquainted on programming, you will need it/use it often from now on...

I suggest you start by looking at the product page (http://www.embeddedarm.com/products/board-detail.php?product=ts-7800) where you find a lot of useful information. 
You may want to start off by getting Linux to boot correctly and get acquainted to the environment and the board. Then you can start writing programs (in C, for example). Also, try using the all-knowing Google for more information on the board. Another noteworthy site could be http://ts78xx.digriz.org.uk/ which now seems to be back online
