Not sure I know the system that well, but this is a slow converter. According to the AD7193 data sheet, in single conversion mode, the DOUT/RDY pin (or RDY bit)  indicates when the conversion is done. Don't you have to check if conversion is done first before reading?

Also, the spictl help indicates -w should be colon delimited hex octets. Example from help:

./spictl -l 1 -w 0B:00:20:00:00 -r 32 <host><:port>
