Why do you need an opto coupler? A transistor buffer would probably be all 
you need.

What does the data sheet for the display say? Often the contrast pin is 
recommended to be connected via a variable resistor to ground so that some 
one can control the contrast level. TS provide a fixed resistor to ground 
that presumably works fine for the display they sell. As I said, consult 
your display datasheet.
