I'm not familiar with the 7260, but have done some timing critical serial code on the 7250.
I was getting problems with missing recieve characters.
I finally tracked it down to issues with flash. Apparently the kernel, when writing to flash will
disable interrupts or something when it is updating the file system. I don't know the architecture details. Maybe it's the flash is waiting out the processor.
In either case you can fix it by not writing to flash when you are time critical.
I'll bet you are logging to flash or something like that, which will cause a periodic flash write to flush the cache.
