The TS-ENC720 (http://www.embeddedarm.com/epc/tsenc720-spec-h.html) would be 
the enclosure you would want for the TS-7260.  All enclosures come with any 
internal cables needed for that particular enclosure (e.g. to connect the 
serial port on the main board to the chassis mounted connector board).  Any 
daughter boards you purchase will come with standoffs.  Other then that each 
board of course has a PC-104 connector and (for daughter cards) the mating 
pins to connect to the board below it.
