I very often use real-time spectrograms for research in the field (acoustic 
surveys for marine mammals) but also for education and training. The 
software we developed allows to "view" sounds in real-time with great 
accuracy while recording to disk or  while playing back a wav file.

that software and for downloading a free version you could use for 
verifying if it matches your needs.
When I teach about bioacoustics, it is very useful to view spectrograms 
while listening to the sounds to show the structure of the sounds and to 
explain how our "percpeption" is correlated with the time-frequency 
distribution of energy.
The same approach is useful for training singers, for "viewing" the sounds 
produced by a musical instruments, or for understanding the real structure 
of some noises.
A notebook with a USB sound device (the Roland UA5 is great) and maybe a 
videoprojector can be enough for your needs.
