Different manufacturers have different colour profiles, which as you say a matter of personal taste. However, video image specs on even pro grade full-frame DSLRs now fall well behind those on mirrorlesss cameras and lets not talk about weight, size, expense,
practicality of the former for this work. How many DSLRs shoot 4k60 or even 6K30, at what cost? Same goes with 1080p180. Once 8K30/60 capture arrives in a affordable conventional camera body it will turn 'traditional' image capture into a 'niche' product
I think. Video-based image technology is allowing is to go places we have not been able to go in an affordable manner before, which is good and Steve's and my point.
