The plant is Azolla or Water fern.

I have seen Coot actually eat it. Others spp seem to be eating it, but I
am not sure that they were eating Azolla or other stuff in the Azolla.
I have been enjoying the photographic opportunities it has been
presenting - both because of a uniform mass of colour and the rather
beautiful tones from green to red.
