I looked up the online OED (available via your ACT library membership). It has
an entry on 'bird' as a verb meaning to hunt birds, with a few uses from the
1570s onwards... But it doesn't have the new meaning of 'to go birdwatching',
as, as side note helpfully points out, the entry hasn't been updated since
1887 (ie since original publication).
