I'm not going to attempt to do a sound / recording summary, but the following 
info might be useful - when I get a chance I'll find some URLs about the topic.

I would think that only WAV AIFF and CD-DA are suitable for recording birdsong.
There's a freeware utility for Macs called SoundApp which converts to & from a 
wide variety of sound files formats.  A far better and more expensive option is 
Sound Edit 2, now sold by Macromedia (Dreamweaver, Director, Flash, etc) which 
allows you to edit various parameters of sound files.
