I think they are fairly regular.  Haven't worked out whether there is any 
seasonality or not, but I think I've seen them in most seasons, and at many 
spots throughout the city.  Used to get them around Centre Point when I 
worked there, and saw one land on a ledge of a building in O'Connell street 
once.  More recently, working in North Sydney I see them occasionally around 
Northpoint (the Hyundai building).
 There is an excellent article from UK in BBC Wildlife magazine (July 2000 
edition), available from good newsagents that explores the diets of city 
peregrines in the UK.  To my great surprise, one of the commonest items 
included Teal, a small duck!  The city nesting pairs rarely hunted in the 
city, but travelled out to the country to hunt.  Exploding the myth that 
city peregrines mostly hunt feral pigeons - at least in the authors study 
area.
