I don't know anything about the process of converting chats into spaghetti bolognaise, but I do know that for years the Belgian chocolate industry combined them with a nougat-like confection in order to produce a much sought after delicacy. A friend and myself had just arrived in Brussels, and he was very anxious to find some of this legendary treat to try for himself, and decided to ask about it at the first opportunity. So as we were leaving the main railway station he spied a young lad masticating vigorously on some type of confection, and approaching the youth he said "Pardon me boy, is that the chat-au-nougat you chew?"
